Food & Beverage Director - Trilogy at Monarch Dunes (Nipomo, CA)
Basic Function: The Food & Beverage (F&B) Director is a key leadership role responsible for the overall success of all F&B operations, encompassing the dining room, bar, catering, and events. This individual will be a strategic partner to the Culinary team, ensuring seamless collaboration and exceptional dining experiences. The F&B Director is accountable for upholding the highest standards of service, product quality, and member/guest satisfaction. This is a hands-on position requiring strong leadership, operational expertise, and a passion for hospitality. The F&B Director will work closely with the Lifestyle and Events Director to create memorable experiences. Weekend and evening availability is essential.
Responsibilities:
Leadership & Management:
- Oversee all F&B operations, including the dining room, bar, catering, and events.
 - Directly supervise the F&B Manager and indirectly manage all front-of-house and event staff.
 - Recruit, train, develop, and mentor F&B team members.
 - Conduct regular performance reviews and provide constructive feedback.
 - Foster a positive and collaborative work environment. 1
 - Develop and implement F&B policies and procedures.
 
Operational Excellence:
- Ensure the highest standards of service and product quality are consistently maintained.
 - Manage inventory control, cost of goods, and labor costs.
 - Develop and manage budgets for all F&B areas.
 - Monitor and analyze financial performance, identifying areas for improvement.
 - Implement and maintain efficient operational systems.
 - Oversee the setup and execution of all events.
 
Member & Guest Satisfaction:
- Proactively address member and guest concerns and feedback.
 - Develop and implement strategies to enhance the member and guest experience.
 - Build strong relationships with members and guests.
 - Ensure all F&B areas are clean, well-maintained, and aesthetically pleasing.
 
Collaboration & Communication:
- Collaborates proactively with the Resort Club Manager and Hoamco's Director of Food Services to identify and capitalize on opportunities that drive results.
 - Partner closely with the Culinary team to develop menus and ensure seamless food and beverage pairings.
 - Collaborate with the Lifestyle and Events Director to create and execute successful events.
 - Communicate effectively with all F&B staff, other departments, and management.
 
Strategic Planning:
- Contribute to the development of the overall F&B strategy.
 - Identify and implement new F&B trends and concepts.
 - Research and analyze competitor offerings.
 
General:
- Maintain compliance with all federal, state, and local laws with regard to food and beverage operations including, but not limited to, liquor laws, food safety laws, etc.
 - Follow all club policies and procedures, rules and regulations.
 - Train F&B staff on all POS upgrades.
 - Purchase and control costs of beverages and appropriate supplies.
 - Maintain necessary inventories of beer, wine, distilled spirits, and all non-alcoholic beverages, to include monthly inventory counts.
 
Qualifications:
- Proven experience as an F&B Director or in a similar leadership role.
 - Strong knowledge of food and beverage operations, including service standards, wine knowledge, and mixology.
 - Excellent leadership, communication, and interpersonal skills.
 - Ability to manage and motivate a team.
 - Strong financial management skills.
 - Passion for hospitality and guest satisfaction.
 - Ability to work flexible hours, including weekends and evenings.
 - Must maintain current Serv Safe Manager certification & Certificate of Management Liquor Law.
 
Supervision Exercised: F&B Manager, Supervisors, Banquet Captain and events team as well as Front of House Staff.
Supervision Received: Resort Club Manager
Physical Requirements:
